Original recipe (Readers Digest) called for All Bran or Fiber One cereal, but I substituted wheat bran. I also substituted oat bran for old-fashioned oats.

Recipe Ingredients for Bran Muffins

1 cup wheat bran
1 1/2 cups mashed banana or unsweetened applesauce
1/4 cup fat-free milk
1 cup whole wheat flour
1/2 cup oat bran
1 tablespoon baking powder
1/2 teaspoon baking soda
1 tablespoon honey
2 tablespoons dark molasses
1 teaspoon cinnamon
2 egg whites
1/4 cup raisins

Recipe Directions for Bran Muffins

  1. Preheat the oven to 400F.

  2. Spray 12-cup muffin pan with cooking spray or insert paper liners.

  3. Combine dry ingredients in large bowl.

  4. Combine bananas, milk, honey, molasses and egg whites in another bowl, then add all at once to dry mixture and stir until combined.

  5. Fold in raisins.

  6. Spoon the batter into the pans and bake for 20 minutes.
