Recipe Ingredients for Bran Muffins

3 cups wheat bran
1 cup water
1 cup brown sugar
1/2 cup butter
2 1/2 cup flour
2 teaspoon baking soda
1 teaspoon salt
2 eggs
2 cups buttermilk

Recipe Directions for Bran Muffins

  1. Boil the water, add to one cup of the bran. Allow to sit until moistened.

  2. Cream together the butter and sugar

  3. In a separate bowl, stir together the flour, baking soda, salt, and remaining 2 cups of bran. Add to butter mixture slowly.

  4. Add the moistened bran, buttermilk, and beaten egg.

  5. Spoon into muffin tins and bake at 400 degrees for 15 minutes
