Bran Muffins Recipe

Makes 17 servings



Double the ingredients and keep in the fridge for up to 30 days. Bake as needed.

Recipe Ingredients for Bran Muffins

2 eggs
1 cup brown sugar
2 tbsp canola oil
2 tbsp applesauce
1 cup oatmeal
1 1/2 cups flour
2 cups wheat bran
2 g salt
15 ml baking soda
1 large grated apple
2 cups milk
1 tsp vanilla essence

Recipe Directions for Bran Muffins

  1. Beat eggs, sugar, oil and applesauce together.

  2. Add dry ingredients and apples. Mix well.

  3. Mix milk and vanilla and add to flour mix.

  4. Stir until well mixed.

  5. LEAVE IN FRIDGE OVERNIGHT.

  6. Spoon mixture into muffin pans and bake for 20-25 minutes (depending on your oven) at 350F.
