Bran Muffins Recipe

Makes 24 servings



Adapted from the back of the Bob's Red Mill Wheat Bran box. Substituted olive oil for butter and buttermilk powder was used. Also substituted 1 cup of oat bran in a batch and it turned out tasty as well.

Recipe Ingredients for Bran muffins

3 cups wheat bran
2 1/2 cups unbleached flour
2 eggs
1/2 cup olive oil
1 cup brown sugar, packed
2 tsp baking soda
1 tsp salt
8 tbsp buttermilk powder
3 cups water, divided

Recipe Directions for Bran muffins

  1. Add 1 cup of boiling water to 1 cup of bran and set aside.

  2. Mix sugar and oil.

  3. Combine flour, soda, salt, and buttermilk powder.

  4. Add rest of bran to bran mixture and mix in beaten eggs.

  5. Mix all together with 2 cups water.

  6. Bake 400 degrees 15 minutes. Makes 24
