quick and easy-- but let the batter rest in the refrigerator over night.

Recipe Ingredients for Bran Muffins

1/2 cup flour
1/2 cup bran flakes cereal
2 tbsp sugar
1 tbsp honey
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg white
2 tablespoons light olive oil
1/2 cup skim milk
3/4 tsp cream of tartar

Recipe Directions for Bran Muffins

  1. add cream of tartar to milk (original recipe calls for buttermilk)

  2. combine with other liquids

  3. add dry ingredients

  4. mix well; cover; store in refrigerator for at least 24 hours

  5. batter will keep up to six weeks. keep covered and do not stir

  6. scoop out batter as needed and fill muffin cups

  7. bake at 400 for 15 to 20 minutes
