Bran muffin recipe that makes a large batch. Make as many as needed at the time and refrigerate the rest of the batter for use at a later date. One of these for breakfast with a glass of milk fills me up, because of the high amount of fiber.

Recipe Ingredients for Bran Muffins

8 cups Raisin Bran
1 quart buttermilk
2 tsp salt
5 tsp baking soda
4 eggs
1 cup cooking oil
5 cups flour
3 cups sugar
1 cup walnuts (optional)
1/2 cup raisins (optional)

Recipe Directions for Bran Muffins

  1. Mix buttermilk, eggs, and cooking oil together in a bowl.

  2. In a large bowl mix the flour, sugar, salt, and baking soda together. Add the Raisin Bran and the optional walnuts and raisins (if desired).

  3. Mix the wet ingredients with the dry ingredients.

  4. Make the desired number of muffins by filling greased muffin tins almost to the top. Place any remaining batter in the refrigerator to use at a later date.

  5. Bake at 400 degrees for 15 to 20 minutes or until an inserted toothpick comes out clean.

  6. To cut down the calories place less batter in muffin tin and lower baking time accordingly.
