Recipe Ingredients for bran muffins

3 cups all bran
1 cup raisins
1/2 cup canola oil
1 cup boiling water
2 eggs
2 cups buttermilk
1/4 cup molasses
2 1/2 cups whole wheat flour
4 tsp sugar
2 1/2 tsp baking soda
1/2 tsp salt

Recipe Directions for bran muffins

  1. boil water

  2. mix first three ingredients

  3. pour the water over and let cool slightly

  4. beat eggs lightly and then add the butttermilk and molasses

  5. mix the dry ingredients

  6. add the wet ingredients to the bran

  7. Add the dry ingredients just until they are moistened

  8. Cover with a moist cloth and let sit 15-60 minutes

  9. divide equally into 24 muffin tins and bake 20-25 minuites.

  10. Let cool
