a muffin recipe I found on Cooks.com. The bran cereal they suggest to use is Kellog's Bran Buds, and then use bran flour where it says 1 c. bran.

Recipe Ingredients for Bran muffins

4 eggs
3/4 cup Splenda
1/2 cup vegetable oil
1 cup buttermilk
16 ounce unsweetened applesauce
3 cups bran cereal
1 cup whole wheat flour
1 cup bran
5 teaspoons baking powder
1 teaspoon salt
1 cup raisins
1 cup finely chopped nuts
1 cup finely chopped apples

Recipe Directions for Bran muffins

  1. Place eggs, Splenda, oil, buttermilk, bran buds, nuts, apples, raisins, and applesauce in bowl and mix well. Let stand 30 minutes.

  2. Sift dry ingredients together and add to above mixture.

  3. Place in greased (I use spray vegetable oil) muffin tins and bake for approximately 25 minutes at 350 degrees. Do toothpick test. Makes 12 large muffins.
