Ultra healthy bran muffins with pumpkin substituted for apple sauce. These are not ultra sweet and are very low fat. Note: I substituted chopped crystallized ginger for half the raisins. Similar calories but WOW the taste difference!

Recipe Ingredients for Bran Muffins with pumpkin and ginger

2 cups bran
3 cups whole wheat flour
2 tsp baking soda
2 tsp baking powder
1 cup molasses
4 eggs
1 1/2 cups pumpkin puree
1 tbsp oil
3/4 cup raisins (substitute chopped crystallized ginger for half the raisins)
2 cup fat free milk

Recipe Directions for Bran Muffins with pumpkin and ginger

  1. Chop pieces of crystallized ginger into raisin-sized bits.

  2. Mix wet ingredients in large bowl with mixer. Combine dry ingredients and ginger/rasins in a separate bowl. Toss raisins/ginger in dry ingredients until they no longer clump.

  3. Combine wet and dry ingredients with mixer, making sure not to over-blend.

  4. Makes 24 muffins

  5. Bake 400 degrees for about 15 minutes.i
