Recipe Ingredients for Bran Muffins by the Pailful

6 cups All Bran cereal
1 teaspoon salt
2 cups boiling water
1 quart buttermilk
1 1/2 cups granulated sugar
1 1/2 cups brown sugar
1 1/2 cups applesauce
2 tablespoons cinnamon
2 tablespoons vanilla
2 cups dried cranberries
4 eggs, beaten
3 cups whole wheat flour
5 teaspoons baking soda

Recipe Directions for Bran Muffins by the Pailful

  1. In medium bowl, combine bran and salt. Stir in boiling water, then buttermilk. Cool to lukewarm.

  2. In large mixing bowl, cream together sugar and applesauce. Add beaten eggs and mix well.

  3. Stir creamed sugar/egg mixture into bran mixture.

  4. Combine soda and flour. In a very large bowl or kettle, stir flour mixture into other mixture, mixing just enough to dampen dry ingredients. Add dried cranberries or other additions.

  5. When ready to bake a batch of muffins, preheat oven to 400. Fill greased or lined muffin cups 2/3 full. Bake 15 minutes.

  6. Remove baked muffins from hot pans onto cooling racks soon after they are out of the oven.

  7. Store batter in sealed container in refrigerator until ready to use. Keeps 6 weeks.
