Recipe Ingredients for Bran Muffins from Mom

1 cup Bran Flakes
0.75 cup Milk, Lowfat, Fluid, 1% Milkfat
1 large Egg, Whole
0.25 cup Shortening, Household, Lard And Vegetable Oil
1 cup All Purpose Flour
2.5 teaspoon Baking Powder
0.5 tsp Salt, Table
0.25 cup Sugars, Granulated
0.5 cup Dried Cranberries

Recipe Directions for Bran Muffins from Mom

  1. Preheat oven to 400 degrees. Lightly grease or spray 12 standard size muffin cups or 24 mini muffin cups. (one large or two small muffins = one serving).

  2. Combine cereal and milk and let stand until mixture is moistened. Beat in egg and shortening with electric hand mixer. Stir in flour, baking powder, salt, sugar, and dried fruit, stirring only until combined.

  3. Fill cups 2/3 full. Bake in preheated oven - 30 min for full size muffins and 10 - 12 min for mini muffins.

  4. Variations - use different types of dried fruit, use raisin bran instead of plain bran, include nuts, or omit dried fruit altogether.
