Recipe Ingredients for Bran Muffins, Low Cal

1 1/4 cups flour
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 1/2 cups Bran flakes
1 1/4 cups skim milk (fat free)
2 egg whites
2 tbsp oil

Recipe Directions for Bran Muffins, Low Cal

  1. Crush bran flakes, mix with milk and let sit for about 5 minutes. Add egg whites and oil.

  2. Sift together dry ingredients.

  3. Add dry ingredients into wet, stir until dry ingredients are moistened (will be lumpy).

  4. Pour into muffin tins (either greased or lined with paper) and bake at 375 for about 22 minutes or until done.

  5. Can be frozen and reheated in microwave as needed. Wrap well before freezing.
