Using Dates instead of apples in my basic bran muffin recipe.

Recipe Ingredients for Bran Muffins with Dates

2 cups bran flakes
1 1/3 cup skim milk
1 cup whole wheat flour
1 tbsp flax seed
1 tbsp baking powder
1 tbsp cinnamon
1/2 tsp salt
1/2 cup unsweetened applesauce
1 large egg
1/2 cup sugar
9 oz chopped dates

Recipe Directions for Bran Muffins with Dates

  1. Mix all items but dates in a bowl and allow to sit.

  2. I use large dates that are not chopped, so while other mix is sitting, chop dates into small pieces.

  3. Mix dates with rest of items.

  4. Bake at 400 F until tops spring back when lightly touched.
