Recipe Ingredients for Bran Muffins w Cherries

1 cup lite soy milk
1/2 cup molasses
3/4 cup unsweetened applesauce
2 tablespoons canola oil
2 eggs
1 cup wheat bran
1 1/2 cups whole wheat pastry flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 teaspoon salt
1/2 cup Dried Cherry

Recipe Directions for Bran Muffins w Cherries

  1. Preheat oven to 350 degrees.

  2. Whisk together almond milk, molasses, applesauce, oil and eggs.

  3. In a separate bowl whisk together bran, flour, baking powder, baking soda, cinnamon and salt.

  4. Add bran mixture to egg mixture and stir just until moistened.

  5. Gently stir in raisins and nuts, if desired. Don't overmix.

  6. Bake 18-20 minutes until tops spring back.

  7. Add 3 tablespoons of flour if at a high altitude
