Recipe Ingredients for Bran Muffins (Bikram Yoga Houston)

3 cups wheat bran
1 cup boiling water
2 1/2 cups whole wheat flour
2 1/2 teaspoons baking soda
1/2 teaspoon salt
2 cups dark brown sugar
1/2 cup oil
2 eggs
1 3/4 cups low fat buttermilk

Recipe Directions for Bran Muffins (Bikram Yoga Houston)

  1. Pour boiling water over one cup of whole wheat bran. Let cool. Mix together flour, 2 cups bran, soda, salt and sugar. Beat eggs, oil and buttermilk. Add liquid and soaked bran to dry mix. Add raisins and nutmeat. Place in covered container and keep in refrigerator. Use as needed. Will keep at least one month.

  2. Bake in muffin tins at 400 degrees for 15-20 minutes.
