Aunt Kami's bran muffins with equal parts applesauce and oil to reduce fat.

Recipe Ingredients for Bran Muffins - 1/2 fat

1 c boiling water
2 1/2 tsp baking soda
1 c sugar
1/4 c oil
1/4 c unsweetened applesauce
1 pint buttermilk
2 eggs
1/2 tbs salt
1 c bran flakes
1 1/2 c all bran cereal
2 1/2 c flour

Recipe Directions for Bran Muffins - 1/2 fat

  1. Mix together boiling water and soda and set aside.

  2. IN a large bowl mix the sugar, oil, applesauce, buttermilk, eggs, and salt.

  3. Mix in the water and soda mixture.

  4. Then add the bran flakes, all bran cereal, and flour.

  5. Bake in muffin tins at 375 degrees for about 20 minutes.
