Yummy, healthy bran muffins. These are great for a quick, healthy morning breakfast. I always put some dried candberries in mine for a little extra. Raisens would work too.

Recipe Ingredients for Bran Muffin

13 1/2 ounce Original Cereal
2 cups boiling water
6 eggs
3 cups sugar
1 cups oil
1 quart buttermilk
5 cups flour
6 teaspoons baking soda
2 teaspoons salt
3 heaping tablespoons cinnamon

Recipe Directions for Bran Muffin

  1. Directions

  2. Pour water over half of bran. Set aside.

  3. Cream eggs, sugar, oil, 1 cup buttermilk, baking soda, salt, and cinnamon.

  4. To this mixture, add alternately, the rest of the buttermilk and flour.

  5. Add bran/water mix.

  6. Stir well and add the rest of the dry bran.

  7. Let set at room temperature for about 1 hour before refrigerating.

  8. When ready to eat, spray a coffee mug with non-stick spray. Fill the cup about half full with mix. Add raisins, cranberries, nuts or nothing. Put in microwave for 1 1/2 to 2 minutes. If you put too much in the cup it won?t cook all the way. When done I like to put a little, or a lot, of butter. YUM!

  9. You can also cook in oven, although I have never done this. Bake at 400 degrees for 15-20 minutes in a cup cake pan.
