Vegan Bran Muffins with Raisins and Hazelnuts

Recipe Ingredients for Bran Muffin

2 cups wheat bran
1 1/4 cups soy milk
1/4 cup tofu
1/3 cups brown sugar
1/4 cups maple syrup
1/4 cup margarine
1 cup whole wheat flour
15 1/2 g baking powder
5 g baking soda
1/2 cup raisins
1/2 cup hazelnuts

Recipe Directions for Bran Muffin

  1. Preheat oven to 190C. Lightly grease muffin tin (12 small muffins).

  2. In large bowl, combine wheat bran and soy milk. Let soak at least 5 minutes.

  3. Using a blender, beat tofu until smooth. Add brown sugar and beat until incorporated. Add maple syrup and melted margarine.

  4. In separate bowl, sift together flour, baking powder and baking soda.

  5. Mix tofu mixture into the bran. Stir in flour mixture until just blended.

  6. Fold in raisins and chopped hazelnuts.

  7. Spoon into prepared muffin tin. Bake 30 minutes, or until toothpick comes out clean.
