Makes 12 muffins (1 muffin = 3 weight watcher points)

Recipe Ingredients for Bran Muffin

1 1/2 cup wheat bran
1 cup milk, skim
1/3 cup vegetable oil
1 egg
1/2 cup brown sugar
1 cup flour, all purpose
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
1/3 cup craisins

Recipe Directions for Bran Muffin

  1. Mix wheat bran and milk together in bowl and let sit for 10 minutes

  2. beat together oil, egg, sugar, & vanilla in separate bowl

  3. sift flour, baking soda & baking powder and salt together in separate bowl

  4. combine oil,egg mixture with bran mixture

  5. slowly add flour mixture until just blended

  6. add craisins

  7. Bake at 375F for 15 - 20 minutes
