low-fat flax & bran muffins

Recipe Ingredients for bran muffin

4 eggs
4 cups skim milk
1 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
3 cups bran cereal
3 cups all bran cereal
2 1/2 cup white flour
2 1/2 cup whole wheat flour
1/3 cup ground flaxseed
5 teaspoons baking soda
1 teaspoon salt

Recipe Directions for bran muffin

  1. mix eggs; sour milk; applesauce; and sugar

  2. stir in cereal

  3. sift flour, soda and salt

  4. add to bran mixture

  5. fill muffin tins 2/3 full

  6. bake for 15-20 minutes at 400 degrees
