Vegan Muffin. Sub soymilk for milk and add 1 1/2 tbsp vinegar to milk.

1 c whole wheat flour
1 tsp salt
1/2 tsp baking soda
1 tsp cinnamon
1 c blueberries
1 tbsp oil
5 tbsp unsweetened applesauce
1/4 c crushed pineapple
3 c all bran
1 1/2 c milk
