Quick bread recipe that can be cooked as is, or you can add to create your own recipe. Makes (13 cups) 1 gallon of batter that will last in the refrigerator up to 5 weeks. Use 3 cups batter for 12-16 muffins.

Recipe Ingredients for Bran Muffin Batter

4 cups Bran flakes
2 cups boiling water
1/2 cup cooked pinto beans
1/2 cup olive oil
1 cup honey
4 eggs
2 tablespoons baking soda
2 teaspoons salt
4 cups 1% milk
2 tablespoons lemon juice
7 cups whole wheat graham flour

Recipe Directions for Bran Muffin Batter

  1. Mix bran cereal and boiling water. Set aside to cool. Puree the beans in blender, and cream together beans, oil and eggs. Add lemon juice to milk and let sour. Add all ingredients together and mix well.

  2. Store in tightly covered container and keep refrigerated at all times.

  3. *recipe calls for 2 1/2 cups honey. I substituted 1 cup agave nectar.

  4. bake muffins for 20-25 minutes at 375 degrees.
