Bran muffins with flax, coconut flour, carrots and apple, sweetened with honey or maple instead of sugar. As healthy as a muffin can be!

Recipe Ingredients for Bran and Flax Muffins

1 1/2 cups Coconut Flour
3/4 cup ground flax seed
3/4 cup bran
3/4 cup honey or maple syrup
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
3/4 cup skim milk
2 eggs, beaten
1 teaspoon vanilla extract
1 tablespoon coconut oil
2 cups carrots, shredded
2 apples, peeled, shredded
1/4 cup raisins

Recipe Directions for Bran and Flax Muffins

  1. oven 350

  2. Muffin Pan, lined with paper cups.

  3. Combine dry in one bowl

  4. Combine wet in another bowl

  5. Combine all

  6. Fill each cup to the brim, they wont rise much.

  7. Bake for 15-20 min
