These spicy muffins are loaded with fiber and flavor. Oat bran and flax seeds along with carrots, raisins, apples and nuts make a healthy difference here.

Recipe Ingredients for Bran Flax Muffins

1 1/2 cups all-purpose flour
3/4 cup ground flax seed
3/4 cup bran
3/4 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
3/4 cup skim milk
1/2 cup egg beaters
1 teaspoon vanilla extract
2 tablespoons oil
2 cups shredded carrots
2 apples, peeled shredded
1/2 cup raisins
1 cup chopped mixed nuts

Recipe Directions for Bran Flax Muffins

  1. Preheat oven to 350. Grease muffin pan with spray

  2. Mix together dry ingrediants.

  3. Add milk, egg beaters, vanilla and oil until blended. Stir in carrots,apples, raisins and nuts.

  4. Fill prepared cups and bake 350 degrees for 15 - 20 minutes, or until toothpick comes out clean.
