From Bob's Red Mill Flaxseed Meal, divided into 24 muffins

Recipe Ingredients for Bran Flax Muffins

1 1/2 cups wheat flour
3/4 cup flaxseed meal
3/4 cup oat flour
1 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
3 oz shredded carrots
2 apples
1/4 cup golden raisins
1 cup chopped walnuts
3/4 cup skim milk
2 eggs
2 tsp vanilla

Recipe Directions for Bran Flax Muffins

  1. Preheat oven to 350 degrees.

  2. Mix together flour, flaxseed meal, oat flour, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

  3. Stir in carrots, apples, raisins, and walnuts.

  4. Combine milk, beaten eggs, and vanilla in separate bowl.

  5. Pour liquid ingredients into dry ingredients.

  6. Stir until ingredients are moistened. Do not over mix.

  7. Fill muffin cups with 1/4 cup measuring cup.

  8. Bake for 15 minutes.
