Recipe Ingredients for Bran Flax muffins

1 1/2 cups whole-wheat flour
3/4 cup flaxseed meal
3/4 cup bran
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 1/2 cups shredded carrots
2 apples, peeled and shredded
1/2 cup raisins
1/2 cup walnuts, chopped
3/4 cup nonfat milk
2 eggs, beaten
1 teaspoon vanilla extract

Recipe Directions for Bran Flax muffins

  1. Preheat oven to 350 degrees. Spray muffin cups with nonstick cooking spray; set aside.

  2. Mix the flour, flaxseed meal, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in the shredded carrots, shredded apples, raisins and nuts. In another mixing bowl, stir together the milk, eggs, and vanilla. Add all at once to the flour mixture until ingredients are moistened. DO NOT over mix. Fill muffin cups full and bake at 350 degrees F. for 15-20 minutes.
