Good breakfast / meal replacement muffin

Recipe Ingredients for Bran Flax Muffins (Bob's revised)

1 1/2 cups whole wheat pastry flour
3/4 cup flaxseed meal
3/4 cup wheat bran
1/3 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 1/2 cups shredded zucchini
2 shredded apples
1/2 cup unsalted almonds
3/4 cup light vanilla soy milk
4 egg whites
1 tsp vanilla

Recipe Directions for Bran Flax Muffins (Bob's revised)

Mix together all dry ingredients in large bowl. Stir in zucchini, apples and chopped nuts. Combine milk, egg whites and vanilla. Pour over dry ingredients until just moistened, do not overmix. Fill muffin cups 3/4 full, bake at 350 for 15/20 minutes. Makes 15 muffins. (may substitute date sugar for brown sugar, analysis could not find it.)
