whole grain muffins, can change out the blueberries for dried cranberries with a little orange zest, or raisins with a little cinnamon.

Recipe Ingredients for bran, blueberry, buttermilk muffins

3 cups bran, natural wheat
2 cups whole-wheat flour
1/4 cup wheat germ
1/2 cup sugar
1 tbl baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs, beaten
2 cups buttermilk
1/3 cup vegetable oil
1/2 cup molasses
1 cup blueberries, fresh (or frozen)

Recipe Directions for bran, blueberry, buttermilk muffins

  1. In a large bowl, mix together bran, flour, wheat germ, sugar, baking powder, baking soda and salt.

  2. In another bowl, combine eggs, buttermilk, oil, molasses; pour into bran mixture and stir just enough to moisten, being careful not to overmix.

  3. Fold in blueberries. Use a large icecream scoop to fill nonstick or paper-lined muffin cups. Bake in 375 oven for about 25 minutes or until firm to the touch.
