A delicious bran biscuit/muffin, proficient in fiber, low in calories.

Recipe Ingredients for Bran Biscuits

1 cup flour, white, all-purpose, unbleached
2 cups wheat bran
2 tbsp. sugar
1 tbsp. baking powder
2 tbsp. butter or hard margarine
1 1/4 cup nonfat milk
1/4 tsp cinnamon
1/4 tsp ground cloves
1 pinch of ground cloves for dusting
1/2 tsp butter for greasing

Recipe Directions for Bran Biscuits

  1. Preheat oven to 450 F or 230 C.

  2. Using fingers, distribute 1/2 tsp butter (reserved for greasing) between each of cup of a 12 cup, ordinary size muffin pan. Rub in to grease the entire interior of each cup. Set aside.

  3. Combine flour, bran, sugar, and baking powder in a large bowl. Cut in butter (or margarine) until mixture resembles coarse crumbs.

  4. Make a well in the centre of crumbed mixture. Add milk to well. Fold together gently until a soft dough forms, without much leftover bran on the sides of the bowl.

  5. Place mix in greased muffin pan (filling any leftover cups partway with cold water). Bake for 10 - 12 minutes, or until a toothpick inserted into the centre of a biscuit comes out clean. If desired, let stand in pan for several minutes. Remove biscuits from pan and place on a wire rack to cool.
