These muffins are easy to make and you can vary the recipe by using another type of nuts or dried fruit (makes 12 muffins).

Recipe Ingredients for Bran Apple Muffins with dried fruit and nuts

1 1/2 cup whole-wheat flour
2/3 cup All-Bran cereal
1/3 cup raw almonds, chopped
2 t baking powder
1/2 t ground cinnamon
3/4 cup apple, peeled, cored, diced
1/4 cup pitted prunes, chopped
2 jumbo eggs
3/4 cup unsweetened almond milk
1/3 cup honey

Recipe Directions for Bran Apple Muffins with dried fruit and nuts

  1. blend flour, cereal, chopped nuts, baking powder, cinnamon, diced apples, and chopped dates in a large bowl

  2. beat eggs in a small bowl until just foamy

  3. beat almond milk and hone into eggs

  4. heat oven to 375

  5. lightly oil muffin tin with spray oil

  6. combine dry ingredients with egg mixture

  7. spoon into muffin tins

  8. bake 15 - 20 minutes
