pork tenderloins braised in apricot-mustard vinegrette

Recipe Ingredients for braised pork medallions

24 oz pork tenderloin, lean
3 T vinegar, basalmic
4 t dijon mustard
8 t apricot jam
2 t olive oil
1 T chopped garlic

Recipe Directions for braised pork medallions

  1. slice tenderloin into 8 3 oz portions

  2. brown in a large skillet

  3. remove from pan and deglaze with basalmic vinegar

  4. add water to come up to 1/4 of the thickness of the chops.

  5. replace the pork and place 1 t of apricot jam and 1/2 t of mustard on top of each

  6. cover and cook for 20 min

  7. uncover and flip chops turning several times to coat

  8. cook covered another 5 - 10 min/

  9. Serve wtih appropriate starch to receive pan drippings
