Braised Lentils with Squash & Chicken

Recipe Ingredients for Braised Lentils with Squash & Chicken

0.5 medium (2-1/2" dia) Onions
1 tsp, leaves Thyme, Dried
1 cup, cubes Squash, Winter, Butternut
16 oz Lentils, Mature Seeds
4 pieces Boneless Skinless Chicken Tenderloins
1.5 tbsp Olive Oil

Recipe Directions for Braised Lentils with Squash & Chicken

Sautee onions, salt, and thyme for five minutes in pre-heated olive oil. Add butternut squash and stir briefly to coat with flavors. Add lentils and stir to coat. Add 4 cups chicken stock and stir. Place 4 chicken tenderloins on top. Cover the pot and put in the oven at 350 for one hour.
