Recipe Ingredients for braised fingerling potatoes

2.93 pound potatoes
2 cups low sodium chicken broth
4 tablespoons smart balance light

Recipe Directions for braised fingerling potatoes

  1. slice potatoes thin

  2. cut parchment paper to fit saute pan, butter 1 side

  3. arrange potatoes in pan

  4. cover with broth

  5. dot w/ butter slices, salt & pepper to taste if desired

  6. place parchment on top, buttered side down

  7. simmer briskly 30-40minutes

  8. enjoy!
