Braised eggplant with Indian spices, onion and ginger

Recipe Ingredients for Braised Eggplant

1 cup Eggplant
2 cups Onion
1 oz. ginger
1 oz. garlic

Recipe Directions for Braised Eggplant

  1. Mince garlic and ginger

  2. Cut rinsed and drained eggplant into 1" cubes

  3. Saute in a little olive oil

  4. Add Indian spices, peppers, Bragg's seasoning to taste.

  5. Deglaze pan with white wine when mixture gets too dry.
