Recipe Ingredients for Braised Chicken with Leeks

4 leeks
2 lbs. potatoes
1 cup parsley
1 lb chicken thighs
4 tbsp olive oil
3 cloves garlic

Recipe Directions for Braised Chicken with Leeks

  1. Preheat the oven to 425F

  2. Clean the leeks. Remove any tired outer leaves. Trim off the ends. Cut the leeks into 1/4 inch rounds

  3. Peel and rinse the potatoes. Cut them into 2-inch chunks.

  4. Peel and coarsely chop 3 cloves garlic.

  5. Rinse and pat dry the parsley. Pluck 1 cup leaves.

  6. Pat the chicken dry.

  7. Put the potatoes in the roasting pan. Sprinkle them with the garlic and drizzle with 3 tbsps. olive oil.

  8. Season generously with salt and pepper. Shake the pan to roll around the potatoes and garlic so they?re mixed, and coated with oil.

  9. Put the potatoes in the oven and roast until golden, 30-40 minutes.

  10. Put 2 tbsp. olive oil in the Dutch oven over medium heat.

  11. When the oil is hot but not smoking, add the chicken.

  12. Sprinkle the chicken with salt and pepper and brown it on one side, which will take about 5 minutes.

  13. When the chicken is brown, turn each piece. Season with salt and pepper and brown the other side, which will take 5 more minutes.

  14. # Stir the potatoes in the oven!

  15. # Remove the chicken from the pan and add the leeks. Stir, getting up all those nice brown bits from the pan as you do.

  16. # Salt and pepper the leeks, stir, cover and cook until they?re softened, about 8 minutes, stirring occasionally.

  17. When the leeks are softened, return the chicken to the pan, nestling it among the leeks.

  18. Add 2 bay leaves and pour cup water into the Dutch oven. Stir, cover and cook for about 20 minutes.

  19. Stir the potatoes

  20. Check the chicken and turn each piece. Add a few tablespoons water if the leeks and chicken are sticking.

  21. Coarsely chop the parsley.

  22. Check the potatoes, which are certainly done. Transfer them to a bowl, scatter the parsley over them and stir. Take them to the table.

  23. Garnish the chicken in the Dutch oven with parsley sprigs
