Even if you don't like celery OR goat cheese, you'll love this dish! No, it's nothing close to a health food, but it is a low-carb side dish (very rare indeed).

Recipe Ingredients for Braised Celery with Goat Cheese

1 t butter
1 t olive oil
1/2 large yellow onion, diced
15 stalks of celery, thinly sliced
4 ounces goat cheese
4 tablespoons whole milk

Recipe Directions for Braised Celery with Goat Cheese

  1. Preheat the oven to 350 degrees F.

  2. Lightly grease a medium sized shallow oven proof dish.

  3. Melt the butte and oil in a heavy-based saucepan and fry the onion and celery for 2-3 minutes, stirring frequently.

  4. Add 3-4 T of water to the pan, heat gently and then cover and simmer over a gentle heat for 5-6 minutes until the celery is nearly tender and the water has almost evaporated.

  5. Remove the pan from the heat and stir in the goat's cheese and milk.

  6. Taste and season with salt and pepper, and then turn into the oven dish.

  7. Cover the dish with buttered greaseproof paper and bake in the oven for 10-12 minutes.

  8. Serve at once.
