Recipe Ingredients for Braised Boneless Beef Short Ribs

2 lb boneless beef short ribs
24 oz beef stock (or demi glaze equivalent)
1 cup dry red wine
2 tbs extra virgin olive oil

Recipe Directions for Braised Boneless Beef Short Ribs

  1. Season short ribs with salt and pepper, and in a heavy bottom roasting pan or braisier (dutch oven), heat the vegetable oil.

  2. When oil is smoking hot, brown the short ribs on both sides. Discard excess fat, remove short ribs from the pan.

  3. Add red wine to the pan, stir with a wooden spoon to remove pan drippings. Bring wine to a boil, add the beef stock and short ribs. Bring to a simmer, cover, and cook in a 325 degree oven for 2 to 2 hours, until fork tender.

  4. Skim any additional fat from the surface of the braised short rib liquid. Taste the sauce, and season to taste.

  5. Serve short ribs with Parsnip mashed potatoes and roasted vegetables. Use between 3 and 4 oz of sauce per portion ? it is recommended that you serve this in a bowl, or a plate with a raised rim.
