Recipe Ingredients for Braised Bok Choy w/ Tomatoes & Gruyere

2 tsp extra virgin olive oil
4 cloves garlic, thinly sliced
2 lb bok choy, trimmed and thinly sliced
2 large tomatoes, chopped
1/4 cup Kalamata olives, pitted/coarsely chopped
1/4 tsp salt
45 g (2 slices) Nature's Own Light Wheat Bread
36 g (1/3 cup)finely shredded Gruyere or Swiss cheese

Recipe Directions for Braised Bok Choy w/ Tomatoes & Gruyere

  1. Place oil and garlic in large, high sided skillet over medium heat and cook till garlic is sizzling and fragrant - @ 3min.

  2. Add bok choy, tomatoes, & olives - cover and cook, stirring occasionally, until bok choy is tender (@ 8-12 min).

  3. Stir in salt.

  4. Toast bread and finely chop.

  5. Top bok choy mixture with bread and cheese.

  6. Cover and cook until cheese is melted (@ 1 min)
