Chicken breast braised with balsamic vinegar and herbs. Untested - it sounds good, but I should try it to tweak the seasoning.

Recipe Ingredients for Braised balsamic chicken

194 g chicken breast (1 fillet)
1 tbsp shallot, thinly sliced
1 clove garlic, minced
1 tbsp balsamic vinegar
1/4 cup chicken broth
1 tomato, chopped
1 tbsp fresh basil, sliced finely
1 tsp fresh rosemary, chopped finely
1 pinch dried oregano
1 pinch marjoram
1 salt and pepper to taste

Recipe Directions for Braised balsamic chicken

  1. Place the chicken breast between two pieces of wax paper or plastic wrap and pound with a mallet or rolling pin until uniformly 1/2 inch thick.

  2. Spray a small skillet with nonstick spray and heat over medium-high heat. Add shallot and garlic and saute briefly. Add chicken and brown on both sides.

  3. Add tomatoes and saute until they release their juices. Add broth, vinegar, herbs, salt and pepper, and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes, or until chicken is no longer pink in the middle. If the liquid dries up too soon, add a bit of chicken stock.

  4. Serving suggestions: Serve with wild rice or almond pilaf and garlicky steamed vegetables.
