Brainy Brownies Recipe

My version of the Sneaky Chef's Brainy Brownies. The original recipe calls for just 1/2 cup sugar or Splenda, I accidentally used 2 cups looking at the wrong ingredient. If you cut the Splenda back to 1/2 cup you cut 50 calories.

Recipe Ingredients for Brainy Brownies

1/2 cup apple sauce (no sugar added)
1/2 cup spinach
1 tsp lemon juice
6 tbsp butter
1/2 cup egg substitute
2 cups Splenda
2 tsp vanilla
2 tbsp whole wheat flour
2 tbsp all purpose flour
2 tbsp wheat germ
1/4 cup rolled oats
1 tbsp unsweetened cocoa powder
1/4 tsp salt
3/4 cup semisweet chocolate chips
2 tsp baking powder

Recipe Directions for Brainy Brownies

  1. Grind the rolled oats in the food processor.

  2. Put the rolled oats, whole wheat flour, all purpose flour and wheat germ in a bowl and mix together.

  3. Melt the butter and chocolate chips in a bowl in the microwave. Allow to cool.

  4. Puree the spinach in the food processor. Combine spinach, applesauce, lemon juice, egg substitute, vanilla and sugar. Stir in the melted chocolate.

  5. Combine all ingredients together. Pour into a greased or sprayed 13x9 pan. Bake at 350 for 25 minutes with Splenda or 30-35 min with sugar.
