This just looks interesting. I thought I would try it. It is one of Paula Deen's.

Recipe Ingredients for Boy choy with Mushrooms

1/2 tablespoon extra virgin olive oil
1/2 tablespoon butter
1 1/2 cups sliced fresh Baby bella mushrooms
1 tablespoon minced shallots
1 1/2 cups baby bok choy, core removed and leaves separated
1/4 cup chicken broth
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon ground pepper

Recipe Directions for Boy choy with Mushrooms

In a medium skillet, heat olive oil and butter over medium heat-high heat until butter is melted. Add mushrooms and shallot: Cook 5 to 6 minutes, or until browned and tenter, stirring occasionally. Add bok choy, broth, lemon juice, salt, and pepper. Cook for 2-3 minutes, or until liquid is absorbed and boy choy is wilted. Serve immediately.
