Great vegetarian option (vegan-friendly if you leave off the goat cheese). Also great with some grilled chicken tossed in.

Recipe Ingredients for Bowtie Pasta with Asparagus

28 oz Tomatoes Whole Peeled
4.727 oz Asparagus
5 cloves Garlic
2 serving Extra Virgin Olive Oil
2 serving Balsamic Vinegar
0.5 cup Nuts Pine
2 oz Goat, Soft Type Cheese
16 oz Bowties Pasta

Recipe Directions for Bowtie Pasta with Asparagus

  1. Cook pasta to al-dente according to box instructions.

  2. Cut off woody ends of a bunch of asparagus. Cut remaining spears into 1.5-2 inch pieces, set aside.

  3. Toast pine nuts over med-low heat in dry skillet...about 2 minutes (careful, they burn easily).

  4. Heat 1-2 TBSP olive oil over med-high heat in heavy skillet, add garlic and cook until aromatic.

  5. Add asparagus and saute until beginning to get tender.

  6. Add can of whole tomatoes, breaking them up with your hands or spoon.

  7. Stir in balsamic vinegar.

  8. Simmer for about 15 minutes, then tear up some basil and toss in.

  9. Toss sauce with pasta and serve, garnishing with toasted pine nuts and crumbled goat cheese.
