Homemade muffins with Maine blueberries

Recipe Ingredients for Bowdoin Blueberry Muffins

3 1/2 cups All Purpose Flour
1 cup Granulated Sugar
1 1/2 tablespoons Baking Powder
1 teaspoon Salt
2 Eggs
3/4 cup Canola Oil
1 1/2 cup Milk
1 teaspoon grated orange zest (optional)
2 cups Blueberries

Recipe Directions for Bowdoin Blueberry Muffins

  1. Combine all dry ingredients.

  2. Combine wet ingredients, mix well, and add to dry. Mix by hand, the batter will be lumpy. Do not over mix.

  3. Fold in Fruit being careful not to over mix.

  4. Fill greased or lined muffin tins about 2/3 full

  5. Sprinkle tops with a little sugar

  6. Bake @ 375 F for 25-30 minutes
