Recipe Ingredients for Bow Tie Pasta with Chicken and Vegetables

2 serving Meijer Gold Farfalle
2 tbsp olive oil
1 lbs boneless skinless chicken breast, cut into small bite-sized pieces
1 medium onion, diced
1 cup broccoli, chopped (frozen, thawed and drained or raw)
1 cup cauliflower, chopped (frozen, thawed and drained or raw)
1 1/2 cup tomato, diced
1/4 cup feta cheese

Recipe Directions for Bow Tie Pasta with Chicken and Vegetables

  1. Prepare the 2 cups pasta according to package directions. Drain and set aside.

  2. Meanwhile, put the oil in a large, at least 12" skillet over medium-high heat. When it's hot, add the onion and chicken to the skillet. If using raw vegetables, add them now.

  3. Move the chicken and onions (and vegetables) around the skillet to coat with the olive oil for a minute. Once coated, allow the chicken to sit undisturbed for 3 or 4 minutes. If using frozen broccoli and cauliflower, add them now. Stir and allow the chicken to sit undisturbed again for 2 or 3 minutes.

  4. Stir in the tomatoes and pasta until heated through; tomato skin should be slightly blistered. Remove from heat.

  5. Top with the feta cheese, stir and serve.
