A rich, creamy sauce from the fond of a seared steak de-glazed with bourbon, heavy cream and finished with coarse ground black pepper and butter.

Recipe Ingredients for Bourbon Mustard Sauce

1/2 cup bourbon
1/2 cup heavy cream
3 tblsp coarse ground mustard
1 tblsp butter
1 tsp salt
1 tblsp black pepper

Recipe Directions for Bourbon Mustard Sauce

  1. After setting steaks aside to rest place the skillet used to cook the steak back on medium-high heat.

  2. Add Bourbon, and cook off most of the alcohol. Optional: flame the bourbon to cook the alcohol off.

  3. Add the heavy cream and bring to a light boil.

  4. Continue to cook the sauce until you can begin to see the bottom of the skillet as you stir. (leave thinner if you prefer a lighter sauce.)

  5. Add butter and season to taste with salt and pepper.
