Boulibasse with fish &7 shell fish

Recipe Ingredients for Boulibasse

1/2 cup olive oil
2 onions
4 leeks
1/2 cup fennel
2 1/2 cups tomatoes
2 cups wine
1/4 tsp saffron
1/2 tsp salt
1/2 tsp pepper
2 tsp sugar
1 tsp fennel seeds
1 tbsp orange rind
12 oz. tuna steak
16 oz shrimp
8 oz scallops
12 oz grouper

Recipe Directions for Boulibasse

  1. chop vegetables

  2. brown in olive oil

  3. add tomatoes and wine

  4. bring to boil

  5. add spices

  6. simmer partially cover 1/2-1 hour

  7. add fish and cook per canadian fish cooking method

  8. if not serving full recipe portion out broth and freeze remaining

  9. add fish portions

  10. do not reheat with fish/seafood
