Recipe Ingredients for Boule

3 cups warm water
1 1/2 tablespoons yeast
1 1/2 tablespoons salt
6 1/2 cups unbleached flour

Recipe Directions for Boule

  1. Use Kitchenaide Mixer

  2. Warm the water to about 100 degrees.

  3. Add yeast and salt to water.

  4. Mix in the flour - mostly all at once - dough hook.

  5. Allow dough to rise in a lidded 5 quart container until double in size - when the top begins to collapse.

  6. Take 1/3 of dough and "cloak" it in flour; then shape into a round ball.

  7. Place on a cornmeal covered cookie sheet to rise for approximately 40 minutes.

  8. Preheat oven to 450 degrees with broiler pan on lower shelf (no water yet), along with a baking stone.

  9. Dash from flour over the top of the loaf and slash a 1/4" deep Tic Tac Toe design in the top.

  10. After about 20 minutes of pre-heating, slide dough onto baking stone; and pour 1 cup of hot tap water into the broiler pan.

  11. Close oven door quickly to trap steam.

  12. Bake for 30 minutes.

  13. Bread should be brown, crusty, and firm.

  14. Crust will become crustier as it cools.
