Recipe Ingredients for Boston Brown oatmeal muffins

1 c zucchini, liquified in blender
1 c quaker oats
3/4 c whole wheat flour
1/4 c ground flax seed
1 c buttermilk
1 t baking powder
1 t baking soda
1/2 t salt
1/2 c raisins
1/3 c brown sugar
1 t cinnamon

Recipe Directions for Boston Brown oatmeal muffins

Mix together zucchini, raisins and oatmeal. Mix together the rest of the dry ingredients, except about a tablespoon of brown sugar and the cinnamon. Mix this with a teaspoon of cinnamon. Stir together the oatmeal mixture the cup of buttermilk and the dry ingredients. Top with the cinnamon brown sugar mix. Bake at 400 for about 18 minutes.
