Recipe Ingredients for borscht vegetarian

1 medium Onions
1 stalk, large (11"-12" long) Celery
2 carrot Carrots
4 cup, shredded Cabbage, Red
2 2 beets (2" dia, sphere) Beets
2 1tsp Olive Oil
3 cup Diced Tomatoes
3 cup Soup, Beef Broth Or Bouillon
2 tsp Vinegar red wine
1/4 tsp Sea Salt
4 cup (8 fl oz) Water

Recipe Directions for borscht vegetarian

  1. Wash beets. Wrap in foil and roast in a 400 oven till done, about an hour.

  2. Heat oil in heavy soup pan. Chop onion and celery and saute for 3-4 minutes. Add 2 cups coarsely chopped cabbage and saute another 2-3 minutes. Add 2 chopped carrots, two 14.5 cans of Muir Glen diced tomatoes and 4-5 cups of water with beef or veggie boulllion cubes dissolved in it. Bring to a boil. Reduce heat and simmer 30 minutes.

  3. Slice beets into thin strips. Add to soup along with the vinegar, sugar and lemon juice. Simmer 15 more minutes. Garnish each bowl with fresh or dried dill, and if desired a dollop of fat free greek yogurt.
