beetroot soup based on borscht but with a little less beetroot

Recipe Ingredients for borscht-ish

200 g beetroot, uncooked
150 g carrots
150 g leeks
100 g celery
1 tbs olive oil
1 tsp dried dill
1/2 tsp hot red pepper
1 tbs tomato puree
500 ml stock

Recipe Directions for borscht-ish

  1. sweat all vege in oil

  2. add stock and chilli, dill and tomato puree

  3. simmer til cooked then blend
